Summer Fruit Galette.

I love this simple galette recipe. I use stone fruits like nectarine, peaches, apricots but you can substitute any other seasonal fruits for this one (apples, berries, figs). It's so easy and perfect to pull together for any last minute dinner dates.. or simply, like most of us, when you just don't have time to do a fancy dessert!

Ingredients:

For the filling...

2 peaches

2 nectarines

4-5 apricots

1 lemon (zest)

2 tsp plain flour

2-3 tbsp light brown sugar

3 tbsp almond meal

 

For the crust...

120g butter (cubed)

160g plain flour

30g light brown sugar

1 egg (whisked)

60ml water

1 tsp vanilla essence (optional)

 

Method:

Mix the flour & sugar together in a bowl. Rub in the butter until the mixture looks like breadcrumbs. Keeping a small amount of the egg mixture back, add the majority of the egg and mix. Add in the water and, using your hands, bring the mixture together into a ball.

On your work surface, flatten out the pastry into a disc shape (about an inch thick), cover with cling film and chill for at least two hours.

Prepare the fruit by cutting all into slices. In a bowl, mix the fruit with the lemon zest and flour.

Roll out some parchment paper on a baking tray, lightly flour the surface of the paper. On your floured work surface, roll the pastry into a circle shape, about 1 cm thick and transfer to the baking tray. Add the almond meal in the centre of the pastry and pile on your fruit mixture, leaving about an inch around the edges. Fold in the edges over your fruit. Brush the edges with the remaining egg mixture and sprinkle over some brown sugar.

Bake in the over at 180 degrees for about 30-40mins, until the pastry is golden.

Remove from the over, leave to cool and serve with some vanilla ice cream.
